Ruffles seem to be everywhere these days! They've made their way from the runways of the world's top designers right onto our cakes! Current fashion trends are an endless source of inspiration.

In this class we will explore the various techniques and mediums available to translate top trends into flowing fabric like haute couture confections!

We will work with fondant, gumpaste, royal icing, modeling chocolate and poured white chocolate. Techniques will include draping, applique', piping, airbrushing and custom mold making. Students will create a multi tiered cake, of their own design, drawing on the skills discussed and demonstrated. Fondant and gum-paste experience is helpful.

In this 2 day class, students will learn how wood, plastic, metal and cardboard are put together to support any cake design their imagination can conjure up.

Mike McCarey will go through the physics and mechanics of how to build internal cake stands to support an unlimited variety of sculpted cakes. During the two days, students will learn how to construct supports using wood, PVC, metal, cardboard and a variety of adhesives. All the physics involved with applying cake to these supports will be thoroughly explored. Each student will produce their own small scale sculpted cake using the internal stands they create in class.

She will cover each step of the design process from initial consultation to delivery and discuss the many components of operating a successful business while working with clients to achieve their dream wedding cake.

Discussions will include pricing, sizing, portions, display cakes, marketing, delivery logistics and staying current in an always-evolving industry. We will also explore various techniques available in creating innovative designs your clients will adore using a variety of popular mediums (fondant, gum-paste, royal icing and poured chocolate).

Students will create a contemporary tiered wedding cake utilizing the skills discussed and demonstrated. Basic fondant and gum-paste experience is helpful.

Muppets 201 with Lauren Kitchens

Using the techniques learned in Muppets 101, Lauren takes you a step further into cake sculpting and structure with this second, more advanced character class. The same rules apply, but this caricature will be sculpted out of cake and standing on two legs.

You will learn how to create a structure with flanges, pipes, and copper tubing as well as how to sculpt cake using templates.

Other techniques include rice cereal treat sculpting, modeling chocolate, and fondant.

All supplies and lunch included. Simply bring a picture of the person you'd like to personify in cake (or a mirror in case you are the lucky subject!)
