For this year's showcake class, internationally renowned Chef Benny Rivera of City Cakes in NYC has designed an amazing display that requires the help and input of students. The class is structured to allow students to participate at various levels. The lucky few who enroll in the full VIP experience will get to be part of the building of this large showcake starting from the planning process and carrying through all phases of construction, detailing, and setup. But for those who cannot participate in the entire 3 day class, Chef Benny has also broken down several of the techniques into smaller workshop classes.

Students will not only learn how to properly cover traditional round cakes with fondant but also, how to cover square cakes with fondant panels to create clean and sharp edges and corners. Truth is square cakes are difficult to work with. This is the perfect class for you to learn all the secrets to create beautiful and modern square cakes. You will also have the opportunity to decorate a 3D carved or sculpted cake correctly using fondant. Learn also traditional old decorating techniques such as basic piping, and more modern techniques such as basics of Isomalt use.
